Ingredients

For the Jollof Rice:

2 cups long-grain parboiled rice

3 large tomatoes, blended

1 red bell pepper, blended

1 medium onion, blended

2 tbsp tomato paste

1/4 cup vegetable oil

2 cups chicken or vegetable broth

1 tbsp curry powder

1 tsp thyme

1/2 tsp cayenne pepper (optional, for heat)

Salt and pepper, to taste

1 bay leaf

1 cup mixed vegetables (peas, carrots, etc.), optional

Protein options (optional): grilled chicken, shrimp, or fried plantain

Execution

1

Prepare the Rice
Rinse the rice under cold water until the water runs clear to remove excess starch. Set aside.

2

Make the Tomato Base
In a blender, combine the tomatoes, bell pepper, and onion, and blend until smooth. In a large pot, heat the vegetable oil over medium heat. Add the blended mixture and cook for about 10 minutes until it reduces slightly and thickens.

3

Add Tomato Paste and Seasonings
Stir in the tomato paste, cooking for another 5 minutes to deepen the color and flavor. Add the curry powder, thyme, smoked paprika, cayenne pepper (if using), and bay leaf, stirring well to combine.

4

Simmer with Broth
Pour in the broth, and bring the mixture to a gentle boil. Season with salt and pepper to taste, then add the rinsed rice. Reduce the heat to low, cover, and let simmer for 20-25 minutes, stirring occasionally to prevent sticking.

5

Add Vegetables and Continue Cooking
If using mixed vegetables, add them in the final 10 minutes of cooking. Stir well and allow the rice to cook until tender and the liquid is absorbed.

6

Serve and Enjoy
Once the rice is cooked and has absorbed the flavors of the sauce, fluff it gently with a fork. Serve hot, with your choice of protein on the side.

Additional tips

  • Adjusting Spice Levels: Add more cayenne or fresh chili for a spicier version.
  • Customize the Vegetables: Green beans, corn, or diced bell peppers make great additions.
  • Make It a One-Pot Meal: Add shrimp or chicken directly to the pot to make Jollof Rice a complete one-pot meal.
  • Authentic Smokiness: For a smoky, authentic flavor, use a bit of smoked fish or smoked meat in the base.
