2 cloves garlic, minced
1 small onion, finely grated
1 tsp salt
1 tsp black pepper
1 tsp sweet paprika
1/2 tsp baking soda (for tenderness)
1 tbsp olive oil
1/4 cup sparkling water (optional for a lighter texture)

Flatbread or pita
Chopped fresh onions
Ajvar or sour cream
Fresh parsley (for garnish)
Execution
Prepare the Cevapi Mixture
In a large bowl, combine the ground beef, minced garlic, grated onion, salt, black pepper, and sweet paprika. Add baking soda, olive oil, and sparkling water if desired for a tender texture. Mix thoroughly until the ingredients are well incorporated.
Shape the Cevapi
Using your hands, shape the mixture into small, finger-sized sausages, around 3-4 inches long. Place them on a tray, cover, and refrigerate for 1-2 hours to allow the flavors to blend.
Grill the Cevapi
Preheat your grill to medium-high heat. Once hot, place the Cevapi on the grill, cooking for about 3-4 minutes on each side, until they are browned and cooked through. If using a stovetop, a cast-iron skillet or grill pan will also work.
Serve and Garnish
Serve the grilled Cevapi with warm flatbread or pita. Add fresh chopped onions, a generous spoon of ajvar or sour cream, and garnish with parsley. Enjoy immediately while hot and smoky!
