Ingredients

For the Olive Salad:

1 cup green olives, pitted and chopped

1 cup black olives, pitted and chopped

1/2 cup roasted red peppers, chopped

1/2 cup pickled cauliflower, chopped (optional)

1/4 cup olive oil

2 cloves garlic, minced

1 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

For the Sandwich:

1 large round sesame seed loaf (Muffuletta bread or ciabatta)

1/2 lb Genoa salami, sliced

1/2 lb mortadella, sliced

1/2 lb ham, sliced

1/2 lb provolone cheese, sliced

1/2 lb mozzarella cheese, sliced

Prepare the Olive Salad
In a medium bowl, combine the green olives, black olives, roasted red peppers, pickled cauliflower (if using), olive oil, minced garlic, red wine vinegar, oregano, salt, and pepper. Mix well, then let the salad sit for at least 30 minutes to allow the flavors to meld.

Slice the Bread
Using a serrated knife, carefully slice the sesame seed loaf in half horizontally. If desired, hollow out a bit of the bread from the inside to create more space for the fillings.

Assemble the Sandwich
Spread a generous amount of the olive salad on the bottom half of the loaf. Layer the sliced meats (Genoa salami, mortadella, and ham) evenly over the olive salad. Add slices of provolone and mozzarella cheese on top.

Top the cheese with additional olive salad, covering the meats and cheese completely. Place the top half of the loaf on the sandwich.
